Lemon Squares
Short Bread Crust
3 c. all purpose flour
1 1/2 c. powdered sugar
1 1/2 c. melted butter
1/2 tsp. vanilla extract
a pinch of salt
Combine all dry ingredients then add melted butter and vanilla extract.
Press into the bottom of a lined 9X13 in baking pan.
Bake for 15 min at 350F.
Lemon Filling
6 eggs
2 c. sugar
2/3 c. fresh lemon juice
zest from 3 lemons
1/2 c. all purpose flour
1 1/2 tsp. baking powder
Mix all 6 eggs and sugar until fluffy.
Add lemon juice and zest into egg and sugar mixture.
Incorporate flour and and baking powder.
Once all combined pour over shortbread crust and bake for another 35-45 min.
